Ingredients

  • 2/3 cup light brown sugar
  • ¼ cup cornstarch
  • 3 cups half and half
  • 3 squares bittersweet chocolate
  • 2 large egg yolks
  • 1 tsp vanilla, orange, or almond extract

Method

Step 1

Whisk together sugar and cornstarch in a medium saucepan.

Step 2

Gradually add milk and whisk to make a smooth liquid.

Step 3

Add chocolate and place over medium high heat. Whisk occasionally until chocolate is completely melted and incorporated into milk.

Step 4

Place egg yolks in a medium size bowl. Once milk mixture begins to steam add ¼ cup of warm milk to yolks whisking to combine. Add 2 additional ¼ cups of warm milk then add yolk mixture to contents of pot. Whisk to combine.

Step 5

By this time cornstarch will be thickening the mixture. Cook at a low simmer until mixture is thickened. Remove from heat.

Step 6

Press mixture through a fine sieve to remove any cooked egg and chocolate particles. Stir in extract.

Step 7

Pour warm pudding into bowls or into a large bowl. Cool completely.

Step 8

To make ornaments: Use a large mouth funnel to direct warm pudding into center of glasses. Chill completely. Whip 2/3 cup heavy cream with 2 TB powdered sugar until soft peaks form. Spoon whipped cream on top of chilled pudding. Sprinkle with colored sprinkles, orange zest, or cinnamon.
