You know how sometimes you look over your desserts and wish there was something else? This no bake pie is tangy, sweet, and super easy to put together. Make and serve the same day adding a little color, and tartness to the dessert table.
- 2 large navel oranges
- 2 12 oz pkgs fresh cranberries, washed and sorted
- 2 - 3 cups granulated sugar depending on your sweet tooth
- 3/4 cup cold water, divided
- 2 pkgs unflavored gelatin
- 1 9" baked pie crust, either pastry or graham cracker
- Garnish: Whipped cream
Zest and juice oranges over a large saucepan.
Add cranberries, sugar, and 1/2 cup water. Stir to combine.
Turn heat to medium high. Bring to a simmer. Adjust heat to prevent juice from spattering when cranberries pop.
Continue to cook about 20 minutes until most of the cranberries are popped, and mixture reaches a jam-like consistency.
Meanwhile, in a small saucepan, pour the remaining water. Sprinkle unflavored gelatin over top. Allow to bloom for 5 minutes.
Set small saucepan over medium heat. Stirring constantly, melt gelatin, about 30 seconds to 1 minute.
Stir into warm cranberry filling. Immediately, pour into prepared crust.
Refrigerate 1 hour to set the filling.
Serve with a dollop of whipped cream.
