Double Decker Apple Cream Pie2014-07-08

Light, and refreshing for summer get togethers.
- 3 TB water
- 3 cups thinly sliced tart apples
- 1 tsp lemon zest
- 1 9” prepared graham cracker crust
- 2 packs unflavored gelatin
- 2 large eggs, beaten
- 1 14 oz can sweetened condensed milk
- 2 cups no sugar added applesauce
Preparation: Add water, and apples to a large skillet and stir. Sweat apples until they have softened, about 4 minutes. Turn heat to high and cook an additional 4 minutes until excess liquid evaporates and apples are about dry. Remove from heat. Gently stir in lemon zest.
Arrange apples in prepared crust. Set aside.
Sprinkle gelatin over beaten eggs in a medium bowl. Set aside for 5 minutes to allow gelatin to bloom.
Stir together sweetened condensed milk and applesauce in a medium saucepan. Set saucepan over medium heat and cook until mixture is steaming.
Ladle a ¼ cup of mixture from saucepan into the bloomed gelatin mixture and whisk. Add another ¼ cup of mixture to the gelatin mixture and whisk.
Pour the warmed gelatin mixture into the saucepan. Whisk to combine then cook for 3 minutes to ensure gelatin is completely melted. Do not boil.
Pour cream mixture over apple layer.
Refrigerate until set, about 2 hours. Refrigerate leftovers. Serve with whipped cream or vanilla ice cream.
