Migas (tortilla and egg scramble)

  • 2 TB unsalted butter
  • 2 garlic cloves, minced
  • 1 TB minced onion
  • 4 large eggs, broken into a small bowl
  • ½ tsp ground cumin
  • ¼ tsp chili powder
  • ¼ tsp salt
  • 2 small tomatoes, chopped or 1 cup quartered cherry tomatoes
  • 1-1/2 cups crushed tortilla chips
  • ¼ cup chopped cilantro or parsley
  • 3 scallions, chopped


Step 1

Melt butter in a large skillet over medium high heat. Add garlic, and onion. Saute until fragrant, 3 minutes. Add eggs. Stir to scramble then sprinkle cumin, chili powder, and salt over top. Continue to cook until eggs are set, 3 minutes.

Step 2

Add tomatoes, tortilla chips, and half of the cilantro. Continue to cook stirring and scrambling mixture until tomatoes are warm and tortilla chips start absorbing the tomato juices. Remove from heat.

Step 3

Divide migas among plates. Sprinkle with remaining cilantro, and chopped scallions. Serve hot.
