No Bake Blueberry Chia Pie2014-07-02

Dairy free, processed sugar free, egg free yet it is big on flavor!
- 2-1/2 cups frozen blueberries
- 1/4 cup + 2 TB chia seeds
- 4 cups fresh blueberries
- 1/3 cup chia seeds
- 1/4 honey
- 2 tsp fresh lemon zest
- 2 cups whole dates; pitted
- 3/4 cup graham cracker crumbs, toasted
- 1/2 cup ground almonds
- 2 TB coconut oil
Combine 3 cups (2-1/2 cups if using frozen) berries, chia, honey, and zest in a medium saucepan over medium heat. Cook stirring occasionally for 10-15 minutes or until thick. Remove from heat stir in remaining cup of blueberries (you won't be adding fresh blueberries if using frozen berries). Pour into prepared crust. Smooth top and chill in refrigerator for an hour before cutting.
To make crust: Put pitted whole dates in the bowl of a food processor. Process until dates become smooth. Add graham cracker crumbs, ground almonds, and coconut oil. Pulse until incorporated. Scrape from bowl and press into 9" pie pan.
