Omelet with Potato Flakes and Bacon

Ingredients
- 1 tsp unsalted butter
- 1 large egg, lightly beaten
- 2 TB potato flakes, toasted
- 2-4 TB minced cooked bacon
- Salt and pepper to taste
Method
Step 1
Melt the butter in a small non stick skillet over medium heat. Pour egg into skillet. Gently cook until outer edges are set.
Step 2
Sprinkle potato flakes and bacon over top. Cover with another skillet of the same diameter or a cookie sheet. This will enable the top of the omelet to cook without disturbing the add-ins. After 3 minutes, remove cover.
Step 3
If egg is set to your preference, slide it from the skillet onto a plate. While sliding, at the mid-way point, quickly bring the skillet to the front of the omelet to fold it. Serve hot.
