Ingredients
- 1. Brine:
- 1 tsp salt
- 1 tsp sugar
- ¼ cup vinegar
- 6 cups shredded cabbage, all white or mixed with red, doesn’t matter
- 2. Dressing:
- 3/4 cup mayonnaise
- ¼ cup + 2 TB granulated sugar
- 2-1/2 tsp white vinegar or apple cider vinegar
- ½ tsp salt
- ½ tsp dry mustard, optional
- ¼ tsp celery seed, optional
- 3. Additions:
- 1 cup grated carrots
- ½ cup grated green pepper, optional
- ¼ cup grated onion
Method
Step 1
Sprinkle salt, sugar, and vinegar over shredded cabbage. Toss to combine. Let sit for 30 minutes to 1 hour. Stir occasionally. Drain and squeeze dry by dumping entire contents into the center of a flour sack (aka lint free), pulling up the corners, and wringing water out over the sink. Place dried cabbage in a large bowl. Proceed with recipe.
Step 2
Mix together dressing by adding mayonnaise, and sugar to a medium size bowl and stirring until incorporated. Add vinegar, salt, dry mustard, and celery seed and stir again. Pour dressing over cabbage. Toss.
Step 3
Stir in carrots, peppers, and onions. Give a good stir again. Adjust salt if necessary. Chill.
