Strawberries and lemons make a refreshing spring sparkler.
Ingredients
- 1/2 pound fresh strawberries, washed, stemmed
- 12 lemons, divided
- 1 cup granulated sugar
- 1 32 oz bottle sparkling water
- 1 bottle pink Moscato, optional
Method
Step 1
Roughly chop strawberries and put in a large pitcher.
Step 2
Zest one lemon with a peeler making a long spiraling peel. Add to pitcher. Then cut away white pith and discard it. Chop up lemon flesh and add to the pitcher.
Step 3
Add sugar and muddle the fruit. Refrigerate for 30 minutes up to an hour to allow the fruit to melt down the sugar (mixture will still be a little grainy).
Step 4
Juice remaining lemons, after the maceration process, add the juice to the mixture. Don't add it before. Too much lemon juice will prevent the sugar from dissolving.
Step 5
Slowly add the sparkling water by pouring down the side of the pitcher. Mix in an up-down motion to preserve the bubbles. Too vigorous round and round stirring will pop all the bubbles.
Step 6
If you want an adults-only drink, omit the sparkling water and add the Moscato instead.
