Velveeta Rotel Roll Ups

I saw a recipe in a regional cookbook that described rolling out Velveeta into a sheet, filling with a savory spread, then re-rolling like a jelly roll. It recommended to serve it with a canapé spreader and crackers. That’s where I jumped off. Why not fill it, slice it then broil it? Isn’t the beauty of Velveeta in its’ meltability? I played around with fillings, and the broiling part? Well, sheer genius if I do say so myself.


  • 16 oz (1/2 box) Velveeta Original Cheese
  • 4 oz cream cheese, room temperature
  • 1-1/2 cups grated mild cheddar (can use packaged cheese shreds)
  • 1 can Rotel, traditional, mild, spicy, drained, patted dry


Step 1

Place cheese block between two large pieces of parchment paper. Place the palm of one hand on the top of the block of cheese and the other across the top of that hand making a “+” sign with your hands. Press down to flatten Velveeta then press down a couple more times to mash the mass into a rough rectangle shape which helps make the next step easier. Using a rolling pin, roll cheese into a rectangle between 1/4” and 1/2” thick. Remove top piece of paper. Using a sharp knife, square up the edges for neatness. You can take the scraps, place on the sheet, top with parchment paper, roll lightly and they will adhere. No waste!

Step 2

Stir cream cheese, and cheddar together then stir in Rotel until combined. Spread over prepared Velveeta.

Step 3

Using bottom sheet of paper as an aid, roll up tightly as possible like a jelly roll. Chill for at least 1 hour up to 4 hours to firm up. Slice with a sharp knife into spirals. Wipe blade between cuts. Reshape the rounds by gently pressing around the outside perimeter.

Step 4

To serve: Sheet Pan Chips and Cheese: Place several spirals over top of tortilla chips spread in an even layer on a sheet pan. Place under broiler for a few minutes until cheese has melted. Use a spatula to put a serving on the plate. Once a guest starts pulling the chips from under the melted roll up. The cheese will ooze and melt over the other chips. It’s fun! Or, serve spirals on top of crackers, or even as a hamburger topping.
